Oxalic acid — found at extremely high concentrations in spinach, kale, almonds, beets, sweet potatoes, and many "superfoods" — binds to calcium and other minerals in the gut to form insoluble crystals that deposit in tissues throughout the body: kidneys, joints, arteries, eyes, nerves, and the thyroid.
